It is grown in the province of Chekiang, on the beautiful Hangchow Lake near Shanghai. Harvesting is done before the rainy season, in April, when the tender shoots are only small leaves. These tender leaves are then subjected, for a short time, to a high temperature in cooking pots similar to woks. This process is used to break down the enzymes that cause oxidation that blocks fermentation. The leaves are then hot-pressed giving it the classic form of flattened Lung Chin.

Preparation: We recommend to use spring water. A quick wash to the leaves with hot water before the first infusion, and the use of teapots in glass or porcelain.
Temperature: 75°C - 85°C.
Infusion time: 30-60 seconds.
Number of infusions: Up to 3 infusions.
Quantity: One heaping tablespoon per cup.
