Origin of Tea: Yunnan, China
Ingredients: Black Puerh Tea, Damask Rose from the Ligurian hinterland.
Taste: Intense, flowery
Color: Dark red
Preparation: it is recommended to use spring water and to wash the leaves* and use terracotta teapots.
Temperature: 90°C - 95°C.
Infusion time: 50 seconds the first infusion, from the second onwards lengthen the time by a few seconds.
Number of infusions: up to 4/5 infusions.
Quantity: one teaspoon of leaves per cup.
Tips: for its qualities it is also suggested during meals . In order not to alter the beneficial properties and the original flavor, the addition of milk, lemon, sugar or honey is not recommended.
Leaf washing*
leaf washing means a very fast first infusion (about 5 seconds) of the leaves using water at the same temperature recommended for infusions. The infusion obtained is thrown away, and after this step we proceed with the real infusions following the recommended times.
This step is used to prepare the leaves for the infusions, the cells pass from the closed dehydrated state to the wet open one, and are thus ready to release all the beneficial substances and aromas in the best possible way. In this step, part of the caffeine and bitter substances are also discharged, making the liqueur softer and more delicate on the palate.
